This role is responsible to properly cut all types of meats into various types of cuts and all preparation of related products in the variety, size, quality, and trim prescribed by company and department standards; to ensure that the work shift contributes to the financial best interests of the store. Complete all other duties as assigned in a timely manner. Duties include cutting and weighing steaks, chops, etc. for individual servings; producing 'value-added' products per established guidelines; cutting, trimming, and boning carcass sections or prime cuts to reduce to cooking cuts; following established recipes to grind and tray meats and make sausage and other products; pricing, dating, wrapping and/or bagging meat products per established guidelines using department scales; properly filling, rotating and merchandising shelves, cases and displays; notifying the manager if products and supplies need to be ordered; receiving, unloading, and stocking merchandise; having familiarity with all products carried in the department; practicing suggestive selling techniques with customers; maintaining a clean, attractive and well stocked department; following all PPE and Safety Guidelines, Food Safety and Cleaning Expectations, and Guest Experience Guidelines; and possibly being assigned tasks in other departments based on customer experience need. Additional responsibilities may be assigned as needed. Requirements include a high school diploma or GED, one year retail or related experience preferred, prior experience in a Meat Cutter Apprentice role strongly preferred, ability to read, write, comprehend, and interpret documents, basic mathematical skills, and being detail oriented. Physical demands include lifting/moving up to 30 pounds frequently and up to 50 pounds occasionally, standing and walking for extended periods, bending, stooping, twisting and turning frequently, exposure to varied temperatures and outside weather conditions, and a low to moderate noise level environment. Travel requirements vary by assignment.
